There is something very special about gajar ka halwa that cannot be explained. It’s a tradition to cook gajar ka halwa at home during winter as it screams love, care, tradition and 'calories'.

Reasons to eat gajar ka halwa in winter

1. The basic ingredient used to make gajar halwa is carrots. Carrots are loaded with vitamin A, vitamin C, vitamin K and fibre. The vitamin A in carrots helps to improve the vision.
2. Adding milk to the halwa adds calcium and protein to the dish.             3. The ghee in halwa carries good fats required by your body to reduce those aches and pains that come along with winter.

How to make gajar ka halwa

Gajar ka halwa, also known as gajrela, and carrot halwa is sweet desert pudding. It is made by placing grated carrot in a pot containg a specific amount of water, sugar, milk, and cardamom and then cooking by regularly stirring.

Ingredients 

9 to 10 medium size juicy carrots, or about 4.5 to 4 cup grated carrots.
4 cups milk
5 tablespoons ghee
4 to 5 whole green cardamom
12 to 14 tablespoons sugar, or add as required
10 to 12 almond chopped or sliced.
10 to 12 cashew chopped
10 pistachios
1 pinch saffron strand ( but its optional)

Instructions how to making gajar ka halwa 

Wash and peel carrots.
Then grated the carrots and put them in a pot which is kept on heat and stir fry continuously until all the  water  is evaporated.
Then put some cardamom and sugar into it and cook for a while. Then also add ghee and cook it for 4 to 5 mints.
Then add the milk in it and cook this mixture on a low to medium flame after some mints the milk starts to reducing slowly  and slowly.
Keep on stirring this halwa.
Simmer till the halwa mixture starts thicken and reduces more.
Stir at interval and also add nuts.
Cover the lid and let it cook on low flame for 4 to 5 mints.
Gajar halwa is ready and it is ready to serve with garnish of almond and pistachio.

You can also add raisins to the garnish along with other nuts
